Pueblo green chile recipe

Ingredients:

1 cup tomatoes, diced

1 cup yellow onions, diced

3-4 cloves garlic, minced

6-8 Pueblo green chiles, diced

4 cups chicken broth

1/4 cup flour

1/4 cup oil
-
1 to 1 1/2 lb diced pork

Salt and pepper to taste
Instructions:
- Add diced pork, salt, pepper, and oil in a big pot and brown.
- Add onions and garlic and cook until onions are translucent.
- Add flour and cook until brown.
- Add chicken stock and bring to boil.
- Add tomatoes and Pueblo chiles.
- Add salt and pepper to taste.
- Simmer for at least 30min or longer.
Be sure to season the pork with other spices of your preference!
