Pueblo green chile recipe

Ingredients:
  • 1 cup tomatoes, diced

  • 1 cup yellow onions, diced

  • 3-4 cloves garlic, minced

  • 6-8 Pueblo green chiles, diced

  • 4 cups chicken broth

  • 1/4 cup flour 

  • 1/4 cup oil

  • 1 to 1 1/2 lb diced pork 

  • Salt and pepper to taste

Instructions:
  1. Add diced pork, salt, pepper, and oil in a big pot and brown.
  2. Add onions and garlic and cook until onions are translucent.
  3. Add flour and cook until brown.
  4. Add chicken stock and bring to boil.
  5. Add tomatoes and Pueblo chiles.
  6. Add salt and pepper to taste.
  7. Simmer for at least 30min or longer.

Be sure to season the pork with other spices of your preference!
